"Guacamole" or Avocado Dip


My kids love to half an avocado and eat it straight out of the shell. Just score the avocado and "voila", no mess and no fuss. The best!

2-3 avocados, preferably Hass, cut into 1/2-inch dice 2 tomato, diced 1 lime, juiced ¼ tsp garlic salt ½ tsp minced onion flakes ¼ tsp chili flakes, optional

Procedure


1Pit the avocados. Hold the avocado halves in one hand while you score the flesh length wise and crosswise. Then squeeze avocado cubes out of the avocado skin into a large bowl.

2Squeeze the lime over the avocado cubes, sprinkle garlic salt, and onion flakes and toss gently.

3Add diced tomatoes and toss again.

4Serve fresh with corn tortilla chips or as a side to any dish.

Beef Crumble Cheese Dip


Cream soups come in many different flavors. Experiment to find out which one you like best.

2 cups ground beef, cooked and drained, see recipe 1 cup American cheese 2 cups Monterey Jack cheese, shredded 1 (10 ounce can) tomatoes and green chilies, drained 1 (10 3/4 oz) can cream of mushroom soup salt, to taste 2 cups milk

Procedure


1In a large skillet add all ingredients and simmer on medium-low heat. Stir well to mix all ingredients. Heat until all cheeses are melted and bubbly or about 10 minutes.

2Remove from heat and let stand to thicken. Serve warm.

Substitute beef for 2 cups of cubed rotisserie chicken.

Serve in bowls with scoop-type corn or flour tortilla chips. Can also be served on top of cheese enchiladas instead of chili con carne or cut bread in cubes and dip fondue style.

Best Party Dip Ever


Just like the "little black dress", this dip makes it to most parties we go to. I can dress it up or down and it goes with any dish. It absolutely never fails.

Dip: 1 (8 oz pkg) cream cheese, softened 1 (8 oz pkg) sour cream or 2% Greek yogurt, plain 1 (12 oz pkg) jalapeno sour cream dip, see tips if unavailable 1/8 tsp salt ½ tsp cayenne pepper 2 cups cheddar and/or Monterrey jack cheese, finely shredded 1 cup tomatoes and green chilies, drained

Procedure


1In a large mixing bowl add all ingredients and blend well with a mixer on low to medium speed.

2Spread on a serving platter and top with cheese and tomatoes with green chilies.

3Use as a dip with assorted condiments such as: crackers, chips or veggies. Use also as a sandwich or wrap spread.

If jalapeno sour cream dip is unavailable, use an 8 ounce container of sour cream and add: 1/4 cup canned diced jalapenos (drained) with 1 tablespoon minced onion flakes.

Substitute Greek yogurt for the sour cream, since it is thick and creamy. It is also full of protein with no added preservatives or sweeteners. It is also diabetic friendly.

Best Party Dip Ever Toppings


Topping 1: 1 Tbs oil ½ cup pepperoni slices, cut into thin strips ½ cup ham and/or turkey, cut into thin strips Topping 2: 1 cup crab meat, drained 2 tsp black olives, sliced Topping 3: 2 cups shredded cheddar and/or Colby jack cheese 1 cup tomatoes and green chilies, drained Topping 4: 1 cup pepperoni slices, cut into quarters 1 tsp pizza seasoning 2 cups cheese, mozzarella 8-10 pizza bagels

Procedure


1Prepare Best Party Dip Ever and spread evenly on platter. Then top with one of these fabulous toppings.

2Topping 1: In a medium skillet add oil and thin strips of pepperoni slices, ham, and turkey. Saute until crisp. Drain and top dip. Serve with a veggie platter.

3Topping 2: Mix crab meat and olives in a bowl and sprinkle on top of dip. Serve with veggie crackers.

4Topping 3: Spread shredded cheese evenly and place tomatoes and chilies on top. Serve with favorite flavor of tortilla chips.

5Topping 4: In a bowl add pepperoni cubes, pizza seasoning, and mozzarella cheese. Spread evenly on top of dip or top mini bagel pizzas and serve.

Chicken and Black Bean Cheese Dip


1 cup rotisserie chicken chunks or 3-4 small pieces of rotisserie chicken 1 (14 oz can) black beans, drained 1 cup American cheese, shredded 2 cups cheddar and/or Monterrey jack cheese, finely shredded 1 (10 oz can) tomatoes with green chilies, drained 1 (10 ¾ oz can) soup, cream of chicken 2 cups milk salt to taste

Procedure


1First, cube chicken into bite sized pieces.

2In a large skillet add all ingredients and simmer on medium-low heat. Stir well to mix all ingredients. Heat until all cheeses are melted and bubbly or about 10 minutes. Remove from heat.

Servings: 6

Nacho Cheese Deluxe


1 (12 oz) jar cheese sauce ½ cup milk 1 cup ground beef, cooked and drained, see recipe 3 slices American cheese 1 cup shredded cheddar or Colby-jack cheese ¼ tsp hot red pepper flakes or to taste

Procedure


1In a large non-stick skillet or sauce pan, add all ingredients and heat on medium-low heat. Simmer and stir until bubbly.

2Remove from heat and let stand to thicken. Serve warm.
