Variations - add fresh or frozen spinach before simmering
Vegetarians can exclude the bacon
| Ingredients | |
| Olive oil | 2 tblsp |
| Onions | 3 roughly chopped |
| Smoked bacon | 3 slices |
| Carrots | 3 sliced |
| Tomatoes | 1 tin chopped |
| Chilli | 1 pinch (optional) |
Method
•Fry onions & bacon until bacon goes brown & crispy
•Add carrots & tomatoes
•Add chilli if used
•Simmer for 20 minutes
•Serve with breadsticks
•Sprinkle fresh coriander on top
