Carrot & Bacon Soup

Variations - add fresh or frozen spinach before simmering

Vegetarians can exclude the bacon

Ingredients
Olive oil2 tblsp
Onions3 roughly chopped
Smoked bacon3 slices
Carrots3 sliced
Tomatoes1 tin chopped
Chilli1 pinch (optional)

Method

•Fry onions & bacon until bacon goes brown & crispy

•Add carrots & tomatoes

•Add chilli if used

•Simmer for 20 minutes

•Serve with breadsticks

•Sprinkle fresh coriander on top
