FLYING ACE DOUGHNUTS

Canola oil, for deep-frying

Confectioners’ sugar, for dusting

Makes about 10 doughnuts

and their holes

In a large bowl, sift together the flours, baking powder, baking soda,

nutmeg, and salt. In another large bowl, using an electric mixer on low

speed, or in the bowl of a stand mixer fitted with the paddle attachment,

beat the egg and granulated sugar until creamy and pale in color. Add the

buttermilk, melted butter, and vanilla and beat until well blended. Add the flour

mixture and beat, still on low speed, just until the mixture comes together into

a soft dough. Cover and refrigerate the dough until firm, at least 30 minutes

and up to 1 hour.

On a generously floured work surface, roll out the dough into a circle

10 inches in diameter and ½ inch thick. Using a 3-inch round doughnut

cutter, cut out as many doughnuts and holes as possible. Gather up the

dough scraps and repeat rolling and cutting.

Line a baking sheet with paper towels. Pour oil to a depth of 2 inches

into a deep, heavy sauté pan and warm over medium-high heat until it

registers 360°F on a deep-frying thermometer.

Carefully lower 2–5 doughnuts or holes into the hot oil and deep-

fry until dark golden, about 1½ minutes. Using tongs, turn over the

doughnuts and cook until dark golden on the second side, about

1 minute longer. Using a slotted spoon, transfer the doughnuts to the paper

towel–lined baking sheet to cool. Repeat to fry the remaining doughnuts and

holes, allowing the oil to return to 360°F between batches.

Arrange the doughnuts and holes on a platter. Using a fine-mesh sieve,

dust the doughnuts generously with confectioners’ sugar. Serve at once.
