Excessive Consumption of Carbohydrates
ОглавлениеUnprocessed—Excessive consumption of carbohydrate foods such as potatoes, wheat, rice, and so on will cause obesity and will produce an imbalance associated with an inadequate intake of protein and fat. The dangers of excess are similar to the dangers of taking too much of any food that is deficient in other essential nutrients. Because of the bulk of unprocessed, carbohydrate-rich foods, it is difficult to overconsume them.
Processed—These include all the preparations rich in added sugar or prepared in such a way that they have lost a large proportion of other essential nutrients. This includes polished rice, white flour, and a variety of substances made from them. Excessive consumption of processed (refined) carbohydrates is the major cause of a broad group of neuroses and of a large number of physical illnesses. Until recently, these were looked upon as unrelated diseases with no known etiology. However, it has become apparent that they are diseases caused by malnutrition. It may help many people who suffer from these diseases to embrace the principles of orthomolecular nutrition if they become aware of why they are ill.
