Healthy Treat Recipe — Guilt-free Chocolate Cupcakes


Dry Ingredients:

1 cup of rice flour, or gluten free flour

1⁄4 cup of buckwheat flour

3 tablespoons cocoa

1 teaspoon of baking powder

Pinch of salt

Wet Ingredients:

1⁄2 cup skim or soy milk

1 teaspoon apple cider vinegar

2/3 cup agave nectar, or maple syrup

1/3 cup sunflower oil or macadamia oil

1 teaspoon vanilla extract

Steps:

Measure and sieve dry ingredients in a bowl. Then mix wet ingredients in another bowl. Mix the wet and dry. Spoon the mixture into lined muffin tin and bake in oven for 18 minutes at 160 degrees Celsius. Leave them to cool before icing.

Icing:

1⁄4 cup cream cheese (dairy free alternative: soy cream cheese)

1⁄4 cup low fat butter or dairy free margarine

2 tablespoons agave nectar

2 tablespoons cocoa

Icing Steps:

Mix icing and top the cupcakes. Decorate with a lolly or a fresh raspberry dotted on each one.
