Partridge with Pear and Onion Confit
ОглавлениеPartridges are compact little birds with a powerful, gamey smell. To put it less politely, they honk. However, get past this and they make a lovely feast dish.
4 organic partridges
8 slices of rindless, smoked streaky bacon
125ml red wine
125ml vegetable stock (I use the water reserved from cooking the vegetables)
1 teaspoon ready-made cranberry sauce
salt and pepper
