3.3.6 Porphyran

Porphyran is a dynamic polysaccharide present in red algae species. It contains β-Dgalactose, either connected to the α-L-galactose and/or 3,6-anhydro-α-L-galactose; this characteristic has been inferred to not contain any simple repeat units in porphyran structure [40]. The source organism, Porphyra sp., is commonly used as a delicacy in Japan, Korea, China, UK and the USA [41]. Chemically, porphyran is very similar to agarose [42, 43].
