For a special Earth Day treat, try this double-layer chocolate cake with

a sprinkling of dusty “dirt” crumbs that would make Pigpen proud.

Preheat the oven to 350°F. Grease two 9-inch round cake pans. Line the

cake pans with parchment paper cut to fit the bottom exactly. Grease

the paper and then sprinkle lightly with flour, tapping out the excess.

Put the unsweetened chocolate in a heatproof bowl set over but not

touching simmering water in a saucepan. Heat, stirring often, until melted

and smooth, about 5 minutes. Remove from the heat and let cool.

In a bowl, whisk together the flour, baking soda, and salt.

In a large bowl, using a handheld mixer or a stand mixer fitted with

the paddle attachment, beat together the butter and both sugars on

medium speed until creamy, about 2 minutes. Add the eggs one at a

time, beating well after each addition. Stop the mixer and scrape down the

sides of the bowl with a silicone spatula.Add the vanilla and beat on medium

speed for 1 minute longer. Add the melted chocolate and beat until evenly

blended. With the mixer on low speed, add the flour mixture alternately with

the buttermilk, beginning and ending with the flour mixture and beating just

until blended after each addition. Stop the mixer and scrape down the sides

of the bowl with the spatula as needed.

4 oz unsweetened chocolate,

finely chopped

2¼ cups all-purpose flour

1 teaspoon baking soda

¼ teaspoon salt

1 cup unsalted butter, at room

temperature

1 cup firmly packed golden

brown sugar

¾ cup granulated sugar

4 large eggs, at room

temperature

2 teaspoons pure vanilla extract

1 cup low-fat buttermilk, at

room temperature

1 recipe Chocolate Fudge

Frosting (page 120)

Sweetened cocoa powder, for

dusting

Makes 10 to 12 servings
