The VIVAMAYR Cookery School
ОглавлениеVegetables and the idea of reducing things to the essential are at the heart of VIVAMAYR cuisine. Take enough food on board to ensure light enjoyment, but try to consume as little as possible. The following pages present important tips from the professionals at our Medical Health Resorts on what you should be thinking about when preparing meals in your own kitchen at home.
Why does VIVAMAYR cuisine not use onions or garlic?
During detox treatment, the focus is on reducing the burden placed on the digestive apparatus by feeding it foodstuffs which are easy to process. This means that more energy is available to support detoxification. The aim is to avoid the strains which onions and garlic can produce for the digestive sequence. VIVAMAYR cooking uses fennel as an aromatic replacement for onion. Parsley root and celery are included to a modest degree, and camelina oil (false flax oil) lends a subtle note which is reminiscent of garlic.
Can I use shop-bought vegetable stock powder instead of soup?
It is quick and easy to make your own broth. Simply simmer vegetable cuttings and spices in a pot for about 20 minutes and then pass through a sieve. The broth produced will keep in the fridge for around 3 days. Freeze in portions if you wish to store it for longer. Yeast-free organic soup stock powder is a practical alternative for those who have little time to devote to cooking.
What milk alternatives can I use in the event of lactose intolerance?
Plant-based drinks and yoghurts made from almonds, rice, millet, hemp, coconut or soya are a good alternative to dairy products derived from animals. Try them out to see what you like and vary the different options. Watch out for sugar content, which can be high in vegan products.
What is the right way to deal with salt?
Our guests are often surprised at the large amounts of salt that are permitted during their stay. This is connected with the high requirement for minerals during treatment. For this reason, guests at the VIVAMAYR receive a mill containing coarse rock salt if this is prescribed by a doctor. Unlike conventional table salt, rock salt is rich in many minerals. It is embedded deep within mountains and therefore enjoys excellent protection from environmental influences. Rock salt is considered to be the most natural form of salt and is suitable for cooking, marinating and seasoning. In everyday life, the recommendation is that some salt should be replaced by mild spices and fresh herbs. Hot spices should be used sparingly. Excess consumption may result in inflammations.
