Potato, leek and smoked bacon soup with parsly pesto SERVES 6
ОглавлениеThe rich wintry flavours of this soup are made even more delicious with a drizzle of parsley pesto.
1 tbsp sunflower or olive oil
4 rashers of smoked streaky bacon, diced
25g (1oz) butter
l onion, peeled and roughly chopped
1 large leek, trimmed and diced
500g (1lb 2oz) potatoes (about 2 large), peeled and diced
Salt and freshly ground black pepper
1.2 litres (2 pints) chicken or vegetable stock (see page 326)
