cucumber salad with mustard

1 cucumber, prepared as on here 93
6 tablespoons olive oil
2 tablespoons red wine vinegar
2 tablespoons Dijon mustard
2 teaspoons golden caster sugar
1/2 teaspoon soft crystal sea salt
2 tablespoons water
4 sprigs of dill, chopped
10 chives, chopped
freshly ground black pepper
Combine the cucumber with all the remaining ingredients, scattering the herbs on top. Serve with Fried Sole (see here).
