5) INDIVIDUAL PIES

For making smaller pies, the principles are the same as above, just scaled down. Do take care not to stretch the pastry to fit the tins. Large pastry cutters or saucers make the perfect stencils for lining and covering round tins. For very small tins, simply break off a small knob of pastry, roll it into a ball and press it into each tin, then use your fingers to push and ease the pastry up the sides.
