Stewed kidneys
ОглавлениеCut the kidneys in halves, remove all the fat and cover the kidneys with hot water, bring to the boil and drain. Cover with more hot water, again bring to the boil and drain. Repeat this process a third time. Remove them from the liquor, slice thin, and thicken the gravy with browned flour rubbed smooth with two teaspoonfuls of butter. Return the kidneys to the gravy, and when very hot add pepper, salt, two tablespoonfuls of mushrooms, minced, two teaspoonfuls of Worcestershire sauce, a little lemon juice, and two tablespoonfuls of sherry. Serve immediately.
