& TOMATO WRAP

2 slices applewood-smoked

bacon

2 tablespoons mayonnaise

1 flour tortilla

¼ cup chopped romaine

lettuce

¼ cup chopped tomato

Makes 1 wrap

In a frying pan, fry the bacon over medium heat, turning once, until

crisp, 8–10 minutes. Transfer to paper towels to drain.

Spread the mayonnaise on the tortilla. Lay the bacon horizontally

across the center of the tortilla. Top the bacon with chopped romaine

lettuce and chopped tomato. Fold the right side of the tortilla partially

over the filling, then roll up from the bottom into a tight cylinder (the filling

will peek out the other side).

Wrap the sandwich in aluminum foil or place in an airtight container

and close tightly. Refrigerate until ready to go, then pack in an

insulated lunch cooler.

Even the humblest of lunch boxes will be enriched by this unique take on the

standard BLT. Wrapping all this flavor in a flour tortilla is a million-dollar idea!
