TUNA-IS-A-FISH SANDWICH

1 can (6 oz) white albacore

tuna, drained

2 tablespoons finely diced

celery or bell pepper

1 tablespoon minced fresh

flat-leaf parsley

2 teaspoons fresh lemon juice

1 tablespoon sweet pickle

relish or chopped capers

(optional)

1–2 tablespoons mayonnaise

4 thin slices sourdough,

whole wheat, or white

bread, toasted

Makes 2 sandwiches

In a bowl, combine the tuna, celery, parsley, lemon juice, pickle relish,

if using, and just enough mayonnaise to bind it all together. Toss with

a fork until well mixed. Pile the tuna mixture on 2 of the bread slices,

dividing it evenly, then top with the remaining

slices. Press gently.

Wrap each

sandwich in

aluminum foil

or arrange in an airtight

container and close tightly.

Refrigerate until ready to

go, then pack in an insulated

lunch cooler.
