Rainbow sprinkles make every bite of these cookies a celebration, but you can also
choose sprinkles to match a holiday: try red and pink for Valentine’s Day, orange and
black for Halloween, or make up your own holiday and use your favorite colors!
Makes about 36 cookies
FOR THE COOKIES
2⁄ cups all-purpose flour
1 teaspoon baking powder
⁄ teaspoon salt
1 cup unsalted butter, at room
temperature
1⁄ cups granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
2 tablespoons rainbow sprinkles,
preferably nonpareils
FOR THE ICING
2⁄ cups powdered sugar
2 tablespoons plus 2 teaspoons
whole milk
2 teaspoons pure vanilla extract
Rainbow sprinkles, preferably
nonpareils, for decorating

PREPARE THE PANS. Preheat the oven to 350°F. Line 2 cookie
sheets with parchment paper.

MAKE THE DOUGH. In a medium bowl, mix the flour, baking
powder, and salt. In a large bowl, using an electric mixer, beat
together the butter and granulated sugar on medium speed until
light and fluffy, 1–2 minutes. On low speed, add the eggs and vanilla
and beat until blended. Turn off the mixer and scrape down the
sides of the bowl with a rubber spatula. Add about half of the flour
mixture and beat on low speed just until blended. Add the remaining
flour mixture and beat just until blended. Turn off the mixer, add the
sprinkles, and stir until evenly distributed.

BAKE THE COOKIES. Scoop up 1 rounded tablespoon of dough,
roll it between your palms into a ball, and set the ball on a prepared
pan. Repeat with the remaining dough, spacing the balls about
3 inches apart. Place 1 cookie sheet into the oven and bake the
cookies just until the edges are light golden brown, about 13
minutes. Let cool on the pan on a wire rack for 5 minutes, then
transfer the cookies directly to the rack and let cool completely.
Repeat with the remaining cookie sheet of cookies.

DECORATE THE COOKIES. To make the icing, in a small bowl,
whisk together the powdered sugar, milk, and vanilla until smooth.
Spoon about 1 tablespoon of the icing onto each cookie, letting it
drip over the edges a little. Decorate with rainbow sprinkles. Let
the icing dry at room temperature until firm, at least 2 hours,
before serving.
