Fish should look fresh, with a clear sheen. Whole fish should have bright eyes and red gills and the flesh should look and feel firm and it should certainly not smell of anything but the sea. Ask if it has been previously frozen. Supermarkets are now demanding more non-frozen fish from their suppliers because freezing fish causes ice crystals to grow between the proteins of the flesh and once defrosted, the fish will start to deteriorate quickly. Buying frozen fish can be a perfectly acceptable option but it’s better to defrost it yourself overnight in the fridge. You should also pay less for it.
