Octopus
ОглавлениеOctopus can end up tough and chewy so it’s often a good idea to tenderize it before cooking. If you have a whole octopus you need to turn it inside out to remove the guts and beak, as you would for a squid (see page 36). Turn back the right way and then rinse under cold running water before using a rolling pin to hammer away at it before cooking.
