9 Lectins: The shot of grace

But the problem is broader than what concerns gluten. In addition, there are the lectins. And gluten is only one of the thousands of lectins!

This widens the range of grains to avoid, the pseudocereals such as: amaranth, quinoa, teff, buckwheat or buckwheat, and others, which do not have gluten but lectins.

For you to understand: all grains with gluten have lectins, although not all those with lectins have gluten. Gluten is a subset of lectins. For example, barley, rye, corn, oats, rice, teff, pseudocereals, legumes ... have lectins. And lectins produce autoimmune diseases just like gluten. You know what I mean, the confusion of the immune system by which it begins to attack healthy cells of the body.

The lectins, proteins of vegetable origin, protect the seeds, are even present in gluten-free cereals (corn, oats, quinoa, buckwheat, soybeans ...), also in legumes and in different plants. And the lectins are as devastating as the gluten itself: they damage the intestine and overexcite the immune system, they inflame.

Indeed, gluten is just one of the many lectins, the most popular. But that is not all: cattle and other animals transmit to humans, through the consumption of their meat, all the lectins that they ingested in their diet of cereals and soybeans. We are already too exposed to lectins to add gluten.

If you're wondering if whole-wheat bread is better, or at least acceptable, I'll tell you that it's just as harmful, if not more so. Guess: to be full grain contains a full load of ... (drum roll) gluten, phytates and lectins! On the one hand you consume more fiber and more micronutrients (shout well!), But on the other hand you eat more proteins that inflame, damage the digestive system and drive the immune system mad (yells badly!).

But now the fashions include it again (wholemeal bread) in order to increase the fiber intake, and that is a big mistake since the whole grain contains more lectins. And if you wonder why in nature there is something "bad" like gluten and lectins, I will answer that it is a strategy of defense against predators. Yes, the plant species can not flee so they defend themselves with toxicity against anyone who dares to eat them.

It's chemical warfare, remember you're in the middle of a war? The vegetables protect their seeds so that they can not be digested (do you understand why the vegetables are so indigestible?) If avoiding gluten is a Herculean task because of its ubiquity, avoiding lectins is almost impossible: they are in all plants and seeds to a greater or lesser degree. As always, the measure of the poison is in the dose.

Whole grains, which are falsely supposed to be healthy, have a great disadvantage compared to refined ones: they contain more lectins, so they will create more problems (deterioration of the digestive system). Put it at its right value, it is true that wheat is satiating, it may contain fiber and micronutrients, but its nutritional value is much lower than that of vegetables, fruits and animals.

Focusing on cereal can lead to malnutrition. This is one of the charges against the agricultural revolution: paradoxically, the desire to feed more people meant more malnutrition, not in quantity but in quality.

As an opiate, it is unbeatable. Do not forget that wheat is a powerful obesogen. And it's designed (in Frankenstein's lab) to be addictive, like an opioid, and to stimulate appetite.

Excess glucose ages: a high blood glucose level makes it seem older than the chronological age. Why? Because that glucose reduces the elastin and collagen that contribute to a smooth skin. Collagen is vital for antiaging. Drinking bone broth (helps you sleep better at night), pig's trotters, and bird skin, will reinforce this youthful protein. Gelatin (cooked collagen) will make you younger.

The good news is that when you stop using it, after a while, you get rid of the withdrawal syndrome and the appetite drops. And the light was made in my brain

When I began my research on how food could affect my migraines, I read that one of the advantages of removing gluten from my diet was to provide me with exceptional mental clarity, as it was. But I admit that then I laughed: what was that "mental clarity"? Did not he enjoy it already? Well, no, although I thought so.

How to explain? Suddenly I felt as if they were taking out the billet that had been in my brain for decades. Yes, that is, a heavy, coarse, and very cement-filled billet stuck to my cranial cavity. Now my mind was seized by clarity, transparency, luminosity ... had returned to the origin, home. Today I still sometimes stop to appreciate this renewed mental condition and I thank God for having shown me the way.

I feel that I have circulated all my life with the hand brake thrown. What liberation! But that is something that I could only realize once I abandoned cereals and gluten, in addition to reducing the intake of carbohydrates. Go change.

Suddenly, my brain was rid of a mental "fog", of dispersion, and of an eternal latent headache. Suddenly, I realized that I had lived with a cloudy, hesitant, scattered, dense brain ... And I know it because I reached pristine mental clarity suddenly. The light was made. Only then did I understand the concept of "mental fog" that had overshadowed my brain for decades, just as fog eclipses London in winter. It is something that can not be explained and that you have to experience it for yourself.

I had lived in the dark, in the mental fog, for decades, I had become accustomed and I thought it was normal. I went from black and white to color!

Thanks to that I have discarded the cereal from my diet, and with it the gluten, my energy levels have risen as before I did not know and my headaches have been reduced in number and intensity to the ridiculous. Reader, you do not know what it is to get out of bed with an incipient headache, knowing already at that time that you will ruin the day completely.

I lived in misery for years. Today that is history. It's over.

Anyway, I think I'm already wasting your time insisting with so many explanations. I know that everyone tells the party as it goes, and that my problem may not be yours. But believe me when I tell you that the number one enemy of humanity is modern cereals. I believe that none of their irrelevant benefits can compensate for how much they hurt us; Remember that at a nutritional level they are not great either, and create too many problems to be able to afford to consume them.
