Papaya Salsa

Prep time: 15 minutes

Ingredients:

1 papaya (seeded and peeled, 2” dice)

½ cucumber (medium dice)

1 red bell pepper (medium dice)

1 small sweet onion (medium dice)

½ jalapeño pepper (seeded and minced)

1 Tbsp. garlic (minced)

3 Tbsp. cilantro (sliced

¼ cup pineapple juice

¼ cup lime juice

Salt and pepper to taste

Directions:

Prepare ingredients as specified in ingredient list, mix all ingredients, and refrigerate until ready to serve.

Remmi Notes: I love to create salsas; they are easy to make and you can be very creative. The seeds of the papaya

are edible———in some cuisines they use them in place of peppercorns. Salsas are also great to serve with different meats, so experiment!
