OYSTERS FRIED.

ОглавлениеSelect the largest oysters, take off all bits of shell and wipe quite dry. Have ready some bread crumbs or grated crackers. Season with salt and pepper. Beat the yelks of two eggs and add a little cream. Dip the oysters in the egg and then in the bread crumbs. Fry in plenty of hot lard and butter till a light brown. Serve hot. Fine oatmeal may be used for frying instead of cracker crumbs.
