Preheat the oven to 400°F. Place the spareribs in a shallow roasting pan and sprinkle with salt, pepper, and sage or thyme. Add the boiling water and bake the ribs for 1 hour.

Drain off the liquid from the pan. In a small bowl, stir together the tomato sauce, cranberry juice, and a pinch of salt. Pour this glaze over the ribs, making sure that the whole rack is completely coated. Reduce the oven heat to 350°F and bake until the ribs are very tender, about 1 hour. Turn the ribs at least once and baste several times with the pan juices.

Cut the rack into individual ribs and serve warm.
