To Pickle Hams

INGREDIENTS: A leg of pork; salt of prunella 1 oz.; saltpetre 1 1/2 oz.; coarse salt 1 lb.; bay salt 4 oz.; coarse sugar 1 1/2 lb.; treacle 1/2 lb.
TIME: to remain in pickle one month; then smoke for three weeks.
