Ingredients
• 5 tbsp (70 g) ghee or butter
• 2 tbsp (24 g) powdered erythritol or allulose
• 1 tsp (~2 g) xanthan gum (for texture)
• 2 tbsp (30 g) unsweetened almond paste (100%)
• Pinch sea salt or fleur de sel
• Coating: 2 tbsp finely chopped pecans
Step-by-Step Preparation:
1. Caramel Base. Melt the Ghee butter with erythritol over low heat until a golden caramel hue is achieved.
2. Aroma. Remove from heat, add xanthan gum for chewiness, vanilla extract, and almond paste. Add a pinch of sea salt.
3. Cooling. Place the mixture in the refrigerator for 1 hour to give it a perfectly firm consistency for shaping.
4. Garnish. Form balls. Roll them in finely chopped pecans. Place a pecan half on top for sophistication.

Variations with macro changes:
