Ingredients
• 1 loaded cup chopped carrots/1 loaded cup shredded/grated carrots
• 1/4 cup raw walnuts
• 1/2 tsp oil
• 1 Tbsp ground raw sugar/any finely ground sweetener
• 1/4 tsp each of cinnamon, ginger & clove powder
• a pinch of nutmeg
• Pancake Batter
• 1 1/4 cup pancake mix
• 1/4 tsp each of cinnamon ginger powder
• a generous pinch of clove & nutmeg powder
• 1/2 tsp vanilla extract
• 2 Tbsp maple syrup
• 1/3 cup almond milk
• 1/3 cup water
• 1 tsp lemon juice
• Vegan Yogurt Coconut Cream Frosting
• 1/4 cup non dairy yogurt
• 1/3 cup coconut cream the thick cream, settles on the top of the can after refrigerating for a few hours/ cashew cream
• 1 Tbsp coconut oil softened
• 1/4 cup ground raw sugar/other sweetener of choice
• 1/2 tsp vanilla extract
• 1 tsp or more lemon juice
• 1/2 tsp cider vinegar
Instructions
• Mesh the carrots, or heartbeat in a blender/food processor to a coarse shred. Heartbeat the pecans to little pieces. I used my blendtec. (complete 1.25 cups of ground carrots and cleaved pecans).
• In a dish, add oil and heat at medium. Add the carrot pecan blend and dish for 3 minutes. Add the sugar and flavors. Blend and cook for an additional 4 minutes. Save a Tbsp of the blend to top the flapjacks.
• In a bowl, whisk the dry elements of the hotcake blend. Add the flavors and blend. Add every one of the wet fixings to the dry and blend to join. Add more water if necessary. Keep the hitter thicker than expected so it can hold a great deal of carrots.
• Add the carrot pecan blend and blend to join.
• Make 4-5 flapjacks. Heat a container on medium heat. Sprinkle a couple of drops of oil. at the point when the container is hot, Spread the hitter to shape same size circles. The player will be thicker than regular flapjack hitter, so use a spoon to shape.
• Cook 4-6 minutes each side.
• Make the icing: Combine everything under icing in a bowl. Taste and change acrid and sugar. Spread a Tablespoon or more icing between every flapjack or use this Date caramel between the hotcakes to draw out the pleasantness.
• Shower the icing on the stacked flapjacks or apply equitably with a spatula.
• Sprinkle the cooked carrot pecan combination on top and serve.
• Serve flapjacks as is with maple syrup, with this yogurt cream icing, or your number one cream cheddar icing.
