Spicy, Chunky Mexican Potato Stew
Recipe:
Place the following in the Crock-Pot and cook on LOW all day:
4 medium potatoes, quartered lengthwise and chopped
1 medium yellow onion, finely chopped
1 jalapeño pepper, finely chopped
1/4 head of celery, chopped from top to include leaves
1 green bell pepper, chopped into bite-sized pieces
1 16-oz. can no-salt stewed tomatoes
1 16-oz. can no-salt tomato sauce
1 6-oz. can no-salt tomato paste
water, enough to fill Crock-Pot 2 inches from the top
Spices
2 T. garlic powder
1/2 t. black pepper
4 T. ground cumin
