• Depending on the smart program, the air fryer

lid may beep partway through to remind you

to turn the food. If you don’t lift the lid, the

air fryer will continue cooking at the selected

temperature until the designated time is up. The

recipes in this book indicate whether you should

flip or rotate the food or cook it undisturbed.

• An air fryer works similarly to a powerful

convection oven. To adapt an existing recipe

from a conventional oven, a rule of thumb is to

decrease the temperature by 25°F (-4°C) and

reduce the cooking time by 25 percent.

• It’s a good idea to invest in an instant-read meat

thermometer to ensure food is cooked safely

and doesn’t dry out. Since cuts of meat can be

different sizes and thicknesses, a thermometer is

the only way to guarantee it is cooked correctly

and not overdone.

TYPES OF OIL

Cooking oil sprays are available in many types,

including canola, vegetable, olive, coconut, and

avocado oil. The most commonly used sprays in

this book are canola and olive oil. Just as with other

cooking methods, these oils stand up well to high

temperatures. Opt for canola oil spray when you

want a neutral-flavored oil to blend in with food

and use olive oil to enhance the flavors. You can

use store-bought oil sprays or make your own with

a spray bottle or aerosol mister. Unless otherwise

noted in a recipe, be generous with oil sprays. The

oil acts as a barrier between the fast-circulating

hot air and your food, so it not only helps to create

a golden brown color and crispy texture on the

outside, but also keeps food moist inside.

The recipes in this book teach you how to “fry” a

variety of favorite foods with a fraction of the oil

used in traditional frying and offer creative ways

for using the high-powered convection technology

to cook a selection of unexpected dishes. These

guidelines will help you master air frying in no time.

machine and the stand-alone Instant Pot Air Fryer

Lid® use rapid air circulation to crisp or cook food,

giving your meals all the rich, crispy flavor of deep-

frying, with little or no oil. There are a couple of

ways to use the air fryer lid:

• Give your dish a crunchy, golden finish after

cooking with the Pressure Cook, Slow Cook,

Steam, or Sous Vide smart programs.

• Cook your dish entirely using the air fryer lid

with the Air Fry, Roast, Bake, or Broil smart

programs.

• You can fit a lot of ingredients in the inner

pot, but for best results, give the food room to

breathe and don’t overcrowd. For most recipes,

place the ingredients in a single layer in the air

fryer basket, making sure there is space for the

hot air to circulate. If everything doesn’t fit in

one layer, cook in batches, as for chicken cutlets

and meatballs.

• Some baked recipes call for a ceramic dish or

baking pan set on the steam rack instead of in

the air fryer basket. Any oven-safe cookware

can be used in the inner pot.

• After lifting the air fryer lid off the cooker base,

always place it on the protection pad provided.

Do not rest the lid on a countertop or on its

power cord. To store your air fryer lid, flip the

protective pad over so the grooved side faces
