2 large eggs

1 tablespoon water

¾ cup (2½ oz/75 g)

dried plain or Italian

bread crumbs

2 tablespoons freshly

grated Parmesan cheese,

plus more for serving

Kosher salt

1 block (½ lb/225 g)

mozzarella cheese,

preferably whole milk,

or 8 mozzarella sticks

Marinara Sauce

(page 135), for serving

This simple recipe has three crucial steps—double-dipping the sticks in egg

and bread crumbs, freezing the sticks before frying, and cooking for exactly

4 minutes (any longer and the cheese will ooze out into a gooey mess). Resist

the urge to dig right in—letting the sticks rest for 1 minute allows the heat from

the breading to transfer into the cheese, creating a delightful stringy center.

To cut the block of cheese, using a sharp knife, slice into rectangles

about 3 inches (7.5 cm) long, 1 inch (2.5 cm) wide, and ½ inch (12 mm)

thick. If using mozzarella sticks, cut the sticks in half horizontally.

In a medium bowl, whisk together the eggs and water. In a large bowl or on

a plate, stir together the bread crumbs, Parmesan, and ½ teaspoon salt.

Line a rimmed baking sheet with parchment paper. Working with a few

sticks at a time, dip the mozzarella in the egg mixture, letting the excess

drip off, then dredge in the bread crumb mixture, turning to coat well and

pressing gently to adhere. Dip the mozzarella in the egg mixture again,

then dredge again in the bread crumbs. Place the coated mozzarella on

the prepared baking sheet as you go. Cover the baking sheet tightly with

plastic wrap and freeze for at least 2 hours or up to 2 days.

Coat the Instant Pot® air fryer basket with canola oil spray. Working in

batches, coat the mozzarella sticks generously with olive oil spray and

arrange a single layer of sticks in the basket, making sure they don’t

touch. Return the remaining mozzarella to the freezer. Insert the basket

into the pot and attach the air fryer lid. Press the Air Fry button and set

the cook time for 4 minutes at 375°F (190°C), then press Start. Cook

undisturbed.

When the cooking time is up, use tongs to carefully transfer the

mozzarella sticks to a plate (the cheese will be very soft). Sprinkle with

Parmesan and let rest for at least 1 minute. Repeat to cook the remaining

batches. Serve with marinara sauce alongside for dipping.
