1 cup (8 oz/225 g) sour
cream
½ cup (2½ oz/70 g)
crumbled blue cheese
2 cloves garlic, minced or
grated
Kosher salt and freshly
ground black pepper
MAKES 1⁄ CUPS 300 G
BLUE CHEESE DIP
In a small bowl, stir together the sour cream, blue cheese, garlic,
¼ teaspoon salt, and a few grindings of pepper. Taste and adjust
the seasoning with salt and pepper.
MAKES ⁄ CUP 135 ML
BUFFALO SAUCE
In a small saucepan over medium heat, melt the butter. Add the garlic
and cook, stirring frequently, until fragrant, about 2 minutes. Add the
hot pepper sauce and vinegar and stir to combine. Remove from the
heat. After coating the wings with the sauce, serve the blue cheese dip
alongside (recipe follows).
