3 large eggs

1 tablespoon mayonnaise

½ cup (2 oz/60 g)

all-purpose flour

¾ cup (2¾ oz/75 g) plain

dried bread crumbs

1 teaspoon smoked paprika

½ cup all-purpose flour

1 large yellow or sweet onion,

cut into ½-inch

(12-mm) rings and separated

If you’re skeptical about how well onion rings can adapt to an air fryer, this recipe will win

you over. Plain dried bread crumbs are the secret to producing the proper texture, and

dipping the onions twice in an egg batter helps the breading stay on during cooking.

In a medium bowl, whisk together the eggs and mayonnaise. Place the

flour in a small bowl. In another medium bowl, stir together the bread

crumbs, paprika, 1 teaspoon salt, and a few grindings of pepper.

Line a rimmed baking sheet with parchment paper. Working with

1 onion ring at a time, dip the ring in the egg mixture, letting the excess

drip off, then dredge in the flour, shaking off the excess. Dip the ring

in the egg mixture again, then dredge in the bread crumb mixture,

pressing gently to adhere to both the outside and inside of the ring.

Place the coated onion rings on the prepared baking sheet as you go.

Working in batches, coat the onion rings well with canola oil spray and

arrange a single layer of rings in the Instant Pot® air fryer basket, making

sure they don’t touch. Insert the basket into the pot and attach the air

fryer lid. Press the Air Fry button and set the cook time for 8 minutes

at 350°F (180°C), then press Start. Flip the rings when prompted.

When the cooking time is up, if the rings aren’t completely golden

and crisp, cook for 2 minutes longer. Use tongs to carefully transfer

the onion rings to a bowl. Repeat to cook the remaining batches,

then serve.
