6–8 oz (170–225 g) shishito

peppers

2 teaspoons olive oil

Kosher salt

Flaky sea salt

In a bowl, toss together the shishito peppers, oil, and ¼ teaspoon

kosher salt.

Coat the Instant Pot® air fryer basket with canola oil spray and add

the peppers. Insert the basket into the pot and attach the air fryer lid.

Press the Air Fry button and set the cook time for 6 minutes at 400°F

(200°C), then press Start. Toss the peppers when prompted.

When the cooking time is up, use tongs to carefully transfer the

peppers to a bowl, or remove the basket from the pot and carefully

pour the peppers into a bowl. Sprinkle with flaky sea salt and serve.

When shishito peppers are in season, there’s no simpler or better starter to a meal than

peppers seared in hot olive oil and sprinkled with salt. Now this summer treat is even

easier, with no frying pan required. If you’re feeding a crowd, cook in batches of about

½ lb (225 g) peppers at a time so they’ll have enough room in the basket to blister.
