Quesadilla

This is a yummy recipe that kids will adore because of all the gooey cheese. Mothers and fathers will love this recipe too because it is loaded with calcium, whole grains, fiber and vitamins.

Ingredients:

1 cup quinoa

2 cups chicken broth

½ shredded American cheese and ½ mozzarella cheese

4 large tortillas

Cubed cooked chicken

Cilantro

Salsa

Jalapeno; optional

Directions:

Step One: In a pot, cook the quinoa with the chicken broth. Cook it until the quinoa is fluffy.

Step two: Gather the tortilla, and fill it with chicken, quinoa, peppers, tomatoes and a lot of cheese. Cook the quesadillas until the cheese melts completely; serve.
